Banana-Blueberry Bread

I don't know about you, but I LOVE banana nut bread! Its just one of those treats that tastes so heavenly, fresh out of the oven with a giant glass of milk :) While cleaning up the kitchen the other night, I noticed that my bananas were getting pretty ripe; so what better to do with them than make banana nut bread. While rummaging around my fridge, I remembered that I had put up quite a bit of fresh blueberries; so I threw a couple handfuls of frozen berries into the mix as well. What makes my Banana-Blueberry Bread extra special is CREAM CHEESE! You cannot go wrong in any recipe when you throw a little cream cheese in the mix ;) I was out of nuts, so to give my bread a little texture, I added some whole grain oats (KIND brand: vanilla-blueberry) with flaxseeds. A little cinnamon sprinkled on top added just the right mix of flavors. The best thing about this banana bread recipe is that you can add so many different foods to make it your own - get creative and mix it up! Peanut butter, pineapple, cinnamon, blueberry, chocolate, etc.



What you will need:

2-1/4 cups flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1 pkg. (8 oz.) Cream Cheese, softened - (I often use the 1/3 less fat to make me feel healthy haha)
1/4 cup butter, softened
1 cup sugar
1 cup mashed fully ripe bananas (about 3)
2 eggs
1 cup chopped nuts (optional)
** I love to add vanilla to just about everything I make, so a teaspoon of Pure Vanilla flavoring is a must for me! Plus your favorite seasonings or mix ins (fruit, chocolate, etc)
As stated above, in this recipe I used blueberries, cinnamon, & whole grain oats (vanilla-blueberry flavored) with flaxseeds.
  

Bake It

HEAT oven to 350°F.
MIX flour, baking powder and baking soda. Beat cream cheese, butter and sugar in large bowl with mixer until blended. Add bananas and eggs; mix well. Gradually add flour mixture, mixing well after each addition. Stir in nuts.
POUR into greased and floured 9x5-inch loaf pan.
BAKE 1 hour 10 min. or until toothpick inserted in center comes out clean. Cool 5 min.; remove from pan to wire rack. Cool completely.

Mississippi Cookies!

One of my dearest friends got married on May 12, and requested the help of Sugar Britches Bakery for her out of town guest bags. I was MORE than tickled to whip up something sweet for her guests! Many of them were traveling from England, Australia, and of course, the States; so what better way to win family & friends over than with some delicious Mississippi shaped cookies?! These sugar cookies were made extra special with icing in a heart shape over the city of Pass Christian, where the wedding took place. Aren't they adorable?!
